Homemade Tomato Soup

Ingredients:

1 can chopped tomatoes
¾ cup extra virgin oil
Salt
Ground pepper
Diced celery
1 small diced carrot
1 piece of yellow onion (diced)
2 cloves minced garlic
1 cup of chicken broth
1 piece bay leaf
2 tablespoons of butter
¼ cup chopped fresh basil leaves
¼ heavy creams (optional)

Instructions for cooking:

  1. Preheat cooking pot for at least 450 F.
  2. Separate the tomato juice from the diced tomatoes placing it in a baking sheet. Season with pepper and salt (put salt by pinch in order to avoid making it to salty). Mix ¼ cup of olive oil and roast until caramelized for at least 15 minutes.
  3. In a separate saucepan, heat the remaining olive oil and place carrots, celery, onions and garlic. Sauté the mixture until it is well cooked and softened.
  4. Place the roasted chopped tomatoes as well as the tomato juice together with the chicken broth. Heat in medium flame until it boils up. Place bay leaf together with butter and simmer until the vegetables are well cooked for at least fifteen to twenty minutes.
  5. Add basil leaves and heavy cream to add volume to the soup and heat in low flame in order to cook the vegetables and wait until it boils.
  6. After boiling, wait for the soup to cool down then puree in a blender. Strain the tomato soup extract with the use of a strainer then reheat again in the cooking pot until it boils. It is best to serve the soup while it is hot.
